This Peppermint Crisp Tart is deliciously decadent, make it for your next special occasion, or just because you want it! The perfect treat when you are missing home and family back in South Africa!
Ingredients:
- 2 x 200g Bakers Tennis Biscuits
- 5 x 35g Peppermint Crisp Chocolate bars
- 500ml Whipping Cream
- 500g Nestle Caramel Treat or Caramel Condensed Milk/Dulce de Leche (You can use more or less depending on how sweet you want your dessert to be.)
Method:
- Whip the cream until soft peaks form. In a separate bowl, beat the caramel with a fork to loosen and ensure a smooth texture.
- While still in the foil wrappers, crush the Peppermint Crisp Chocolate bars by bashing them with a rolling pin on a wooden board. Use your fingers to break up larger pieces if necessary.
- Gently fold the caramel into the whipped cream, then add most of the crushed Peppermint Crisp Chocolate pieces (set aside a cupful for decoration).
- Line a large dish (at least 5cm deep) with a single layer of whole Tennis Biscuits. Top with 1-1.5cm thick caramel mixture, then add another layer of Tennis Biscuits. Pour the remainder of the caramel mixture over the second layer of Tennis Biscuits.
- Sprinkle the last of the Peppermint Crisp chunks over the top. Cover with tin foil and chill for at least 8 hours before serving, preferably overnight.
*Cook's note: Effortless and quick, this tart makes a maximum of 30 minutes to make. This recipe makes one large tart big enough for at least 10 servings.
